Valentine’s Day Chocolate Molten Lava Cake

Rich, fudgy chocolate molten lava cakes with a soft strawberry-cream center that melts when you cut into it. Perfect for Valentine’s Day — impressive, romantic, and surprisingly easy.

Ingredients
  

  • 1/2 cup unsalted butter
  • 6 oz bittersweet chocolate 60-70% is preferred
  • 2 large eggs
  • 2 egg yolks
  • 1/3 cup sugar
  • 3 tbs flour
  • 1/8 tsp salt
  • 4 Lindt LINDOR Strawberry and cream white chocolate candy truffles

Instructions
 

  • Preheat the oven to 450F. Butter 4 (4- to 5-ounce) ramekins and place them on a baking sheet.
  • Combine the butter and chocolate and microwave on high, stirring every 30-seconds until melted. Whisk together until smooth.
  • In a large mixing bowl, combine the eggs, egg yolks, sugar, and salt. Beat on medium speed or whisk until thick and pale yellow
  • Fold the egg mixture into the chocolate mixture. Mix until well combined.
  • Add the flour. Mix until fully incorporated.
  • Divide the batter among the prepared ramekins.
  • Sink the strawberry and cream candy truffle into the middle of the ramekin. Cover the top with more batter.
  • Bake for 8-11 minutes or until the sides of the cakes are firm set but the center is jiggly. Let the cakes cool in the ramekins for 1 minute. ( Mine took 10-11 min!) Keep a watchful eye and go off of your oven.
