This roasted asparagus with garlicky tahini sauce is an easy, healthy side dish packed with flavor. Tender oven roasted asparagus is finished with a creamy, lemony tahini drizzle that makes this simple veggie feel elevated and restaurant-worthy.
2bunches of fresh asparagus or one big bag from Costco
1tbsolive oil
1/2tspsalt
1/4tsppepper
Garlicky Tahini Sauce
1/2cuptahini
2juice from lemon
3garlic cloves
1tbsolive oil
1/3cupwatermore depending on desired consistency (i added a couple extra tbs)
1/4tspsalt
1/8 tsppepper
Toppings
Toasted pumpkin seeds
Lemon Zest
Parmesan cheese
Red pepper flakes if you like a little extra spice
Instructions
Preheat oven to 425°F.
Place trimmed asparagus on a baking sheet. Drizzle with olive oil, then season with salt and pepper. Toss to coat evenly and spread into a single layer.
Roast for 10–15 minutes, or until the asparagus is tender with lightly crisp edges.
While the asparagus cooks, make the garlic tahini sauce by adding all sauce ingredients to a blender or using immersion blender. Blend until smooth and creamy. If needed, add a little warm water to thin to your desired consistency.
