One Pot Tortellini with Sausage in a Creamy Tomato Sauce

This one pot creamy tomato tortellini with sausage is the ultimate easy weeknight dinner. Made with cheese tortellini, Italian sausage, spinach, and parmesan in a rich, silky tomato cream sauce—all in one pan and ready in 30 minutes.

1 Ib Italian Sausage 3-4 garlic cloves or 1.5 tbs pre-minced garlic 1 14.oz can diced tomatoes with juices 1 cup chicken broth 1 cup heavy cream 1/2 cup grated parmesan cheese 18 oz cheese tortellini 2-3 cups spinach salt and pepper to taste ( I personally did not use any!) 1 tsp italian 1/2 tsp red pepper flakes optional if you like spice 1 tbs flour 1 cup Roas marinara sauce optional, not necessary. ( my kids will eat this meal if the color looks more like spaghetti)
Brown the Italian sausage in a large skillet over medium heat, breaking it up as it cooks, until fully cooked. Drain excess grease if needed.
stir in the minced garlic and cook for 30 seconds until fragrant.
Add in the seasonings plus the flour
Pour in the diced tomatoes (with juices) and let simmer for 2–3 minutes.
Stir in the chicken broth and heavy cream, bringing to a gentle simmer.
Add the tortellini, cover, and cook according to package directions (about 4–5 minutes), stirring occasionally.
Reduce heat and stir in the parmesan cheese until melted and the sauce is creamy.
Add the spinach and stir until wilted.
Season with salt and pepper to taste, then serve immediately.
Sauce will thicken as it sits—add a splash of broth or cream to loosen if needed.
Don’t overcook the tortellini or it can become too soft.
You can use mild or spicy Italian sausage depending on preference.
