Ingredients
  

  • 2 Cups All Purpose Flour
  • 1 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 1/2 Cup Avocado oil or any neutral oil
  • 1 15oz Pumpkin Puree
  • 2 Eggs
  • 1 TBS Pumpkin Spice
  • 1 tsp Baking Soda
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1/4 Tsp Cinnamon

Streusel

  • 1/4 Cup Melted Butter
  • 1/2 Cup Flour
  • 1/4 Cup Brown Sugar
  • 2 TBS Sugar
  • 1/4 tsp Cinnamon

Pumpkin Pie Whipped Honey Glaze

  • 12 oz Honey
  • 1 Tsp Pumpkin Pie Spice
  • 2 TBS Heavy Cream
  • 1 Pinch Salt

Instructions
 

  • Preheat oven to 325°F. Grease or line a loaf pan.
  • In a large bowl, whisk together the sugars, pumpkin puree, eggs, and avocado oil until smooth.
  • In another bowl, mix flour, pumpkin spice, baking soda, baking powder, salt, and cinnamon.
  • Combine wet and dry ingredients — stir until just blended (don’t overmix!).
  • Pour batter into the pan.
  • In a small bowl, mix streusel ingredients with a fork until crumbly. Sprinkle evenly on top of the batter.
  • Bake 1 hour and 15-20 minutes, or until a toothpick comes out clean
  • Let cool completely, then drizzle with the pumpkin pie whipped honey glaze.

Pumpkin Pie Whipped Honey Glaze

  • Using a stand mixer, Whip 12 oz of honey on medium-low for 20 minutes until light and fluffy.
  • Add in pumpkin pie spice. Whip until evenly mixed.
  • Take 1/2 Cup of the Whipped Honey into a separate bowl and add 2 TBS Heavy Cream. Add more to reach desired consistency.
