And somehow — almost magically — it comes out creamy, savory, and full of rich French onion flavor.

Ingredients

ground beef (85/15 preferred)

uncooked long grain white rice

beef broth

French onion soup mix

Worcestershire sauce

black pepper

mozzarella cheese or shredded gruyère, Swiss cheese


(No chopped onions or garlic needed — the seasoning does all the work.)



How to Make French Onion Ground Beef and Rice Casserole



1. Prep the dish

First, preheat your oven to 350°F.

Lightly grease a 9×13 baking dish.


2. Dump and stir

In this order, you will dump into the baking dish

uncooked rice

french onion soup mix and seasonings

raw uncooked ground beef

sour cream

beef broth

Worcestershire sauce

Then, using a spoon or spatula, stir everything until well combined but make sure the rice stay submerged in the liquids.



3. Bake

Next, cover tightly with foil.

Bake for 60 minutes.

Do not stir halfway through. (Trust the process — the rice cooks best when left alone.)



4. Add the cheese

After 60 minutes, carefully remove the foil.

At this point the rice should be tender and most liquid absorbed.

Then sprinkle:

  • mozzarella or
  • gruyère or Swiss

Optionally, add French fried onions.

Return to oven uncovered for 10–15 minutes, until the cheese melts and bubbles.



5. Rest (Very Important Step)

Finally, let the casserole rest for 10 minutes before serving.

This allows the sauce to thicken and the rice to finish absorbing flavor.



Helpful Tips

  • Long grain rice works best. Instant rice will turn mushy.
  • Do not use brown rice — it needs more liquid and cook time.
  • The casserole may look slightly saucy coming out of the oven. It thickens as it sits.
  • Use Gruyere cheese for the richest flavor

Actually, you shouldn’t. Stirring interrupts how rice cooks and can cause uneven texture. The oven essentially acts like a rice cooker here.

Usually one of three things happened:

  1. The foil wasn’t sealed tightly
  2. The rice wasn’t fully submerged
  3. Oven temperature runs cool

If needed, simply add ¼ cup broth, re-cover, and bake 10–15 more minutes.



Variations

  • Add mushrooms
  • Add frozen peas
  • Swap Swiss for provolone

Ingredients
  

  • 1 lb ground beef 85/15 preferred
  • 2 1/2 cups beef broth
  • 1 cup long grain white rice i used jasmine rice
  • 1/2 cup sour cream
  • 1 packet French onion soup mix
  • 1 tbs Worcestershire
  • 1/2 tsp dried thyme
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 cups either Gruyere, swiss or mozzarella cheese
  • 1 cup french fried onions

Instructions
 

  • Preheat oven to 350°F. Lightly grease a 9×13 baking dish.
  • Add the uncooked rice, french onion soup mix, seasonings, raw ground beef, beef broth, sour cream, Worcestershire sauce
  • Stir well and make sure the rice is fully covered by the liquid.
  • Cover tightly with foil and bake for 60 minutes.
  • Remove foil and Top with cheese (mozzarella or Gruyère/Swiss). Add French fried onions if using.
  • Bake uncovered for 10–15 minutes, until the cheese is melted and bubbly.
  • Rest 10 minutes before serving so it thickens up.

Notes

  • Do not use instant rice or it can turn mushy.
  • If your rice is still firm, your foil likely wasn’t sealed tight or the rice wasn’t fully submerged. Add 1/4 cup broth, cover again, and bake 10–15 minutes more.
  • Brown rice needs more liquid and time and isn’t a 1:1 swap here.
  • For the richest flavor, use Gruyère—but Swiss works great too.
